I was making buffalo wings with a 1:3:2 ratio of Dave's Ghost Pepper Insanity Sauce, Frank's, and butter, but let's face it, Dave's tastes terrible, even cut with Frank's. I was concerned, however, about finding an extract-free hot sauce that was suitably hot to meet my tastes.
I am pleased to report that this sauce is EXCELLENT in that department. A 2:1 ratio of this sauce and butter produced something easily in the top five hottest wing sauces I've had. I feel pretty confident that next time I can mix this half-and-half with Frank's for some very hot wings with a pretty traditional flavor otherwise.
My only complaints would be the thickness (it's a little hard to get out of the bottle - very close to a puree), and the puree-like, somewhat bland (aside from the excellent heat and pepperiness) taste. I guess I was expecting just a little more tartness, and maybe a little more vinegar and salt and a little less xanthan gum would make this PERFECT. In any case, I love not having to use Dave's for heat, and I look forward to trying this in a half-and-half mix with Frank's.
